What do you do when you’re not brewing? I’m a technician in the Genomics Core at the NYU Center for Genomics and Systems Biology. I operate their DNA sequencers and train Center personnel to use our other equipment. I’m also getting my MS in Biology. My thesis research focuses on using a mushroom species to decontaminate polluted city soils and determining what effect that has on the soil microbiome. 

How did you start brewing? In the summer of 2011, a family friend invited my mom and me to a brewday. We went to a homebrew shop in the middle of suburbia and as soon as we walked in they offered us homebrew and freshly grilled brats. As the day progressed, I saw that in addition to producing my all-time favorite beverage, brewing was fun, physical, and made good use of my background in biochemistry and physics. I’ve been hooked ever since. 

Where do you want to go with your brewing? I’m hoping to start my PhD in a prominent yeast genetics lab in Belgium next fall. If that doesn’t pan out, I’ll keep homebrewing and working. Maybe one day open a brewpub & banya at the base of the Tetons in Jackson, Wyoming . . . something like that.

What recipe would you like to share?

Beetitude, which won 2nd place in category 21 at Homebrew Alley IX, is my fine-tuned version of Bitter & Esters’ Blood Red Beet Ale. The Biotta Beet Juice is key to the vibrant beet color, aroma, and flavor. I’ve used other 100% beet juice and it’s just not the same.
